Simon Ruf - New Executive Sous Chef

chefA Swiss native, Chef Simon was previously chef de cuisine at the luxurious Grand Hyatt Guangzhou, located in the capital of Guangdong Province, China. Before joining Hyatt International, Chef Simon had worked at an array of renowned restaurants in Europe, including the widely acclaimed three Michelin star German Restaurant Barreis in the Black Forest, where he held the role of chef de partie.

A kitchen wizard with deft hands who has a hidden talent of ball-juggling, Chef Simon enjoys playing the piano to unwind at the end of the day.

Chef Simon says: “This November, savour the fine new set menus showcasing the exquisite tastes that embody the nine different experiences represented at mezza9.”

In November, Chef Simon and the culinary team at mezza9, Grand Hyatt Singapore’s signature restaurant offering vibrant tastes, sight and sounds, serve up a selection of delectable set meals designed to delight your palate while going easy on your wallet.

Priced at $29++ and $39++, respectively, new highlights from the menu include Salmon Gravlax, Dill with Mustard Dressing, Crispy Onions, Lettuce and Charcoal-grilled Australian Flat Iron Steak from the Western grill (we highly recommend), Yam Pu Nim (soft shell crab with green mango salad) from the Thai deli and crustacean bar, Deep-fried Guramme from the Chinese steam basket and Baked Fruit Tart with Tahitian Vanilla Ice-cream from the patisserie. Also a must-try is mezza9's wide selection of salads!
